Hamburger Casserole

Here it is ladies! Over at Quiet Life (see side bar) on Friday Donna did a Friday five about foods that remind you of being a child. I didn't have time to post anything but this is a meal that always reminds me of living at home. Even when it is cooking in my kitchen, I close my eyes, inhale deeply and voila! I am back home. Ahh the good 'ole days when my awesome mom did the cooking!!

2 large potatoes, sliced
2-3 medium carrots, sliced
1 can of peas, drained
3 small onions, sliced
1 1/2 lbs lean ground meat, browned
2 stalks celery
1 10 oz can tomato soup
1 10 oz can water (I use 2)

Place layers of the vegetables in order given into crock pot. Season each layer w/ a little bit old salt and pepper. Put the browned meat on top of celery. Mix tomato soup with water and pour into crock pot. Cover and set to low 6-8 hours or high 2-4 hours, stirring occasionally.

I started making hamburger casserole, which became known as "crock pot for dinner" around our house, one halloween in the mid '70's. It became tradition.
